- 1 1/2 lbs. sirloin steak, thinly sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp. dried thyme
- 1 tsp. paprika
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1 cup beef broth
- 1 cup shredded cheddar cheese
- 4 large potatoes, peeled and thinly sliced
- 1/4 cup chopped fresh parsley
Instructions
- In a slow cooker, combine steak, onion, garlic, thyme, paprika, salt, pepper, and beef broth.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the steak is tender.
- Layer potato slices on top of the steak mixture, sprinkle with cheddar cheese, cover, and cook for an additional 1-2 hours until potatoes are tender.
- Garnish with chopped parsley before serving.
Notes
- For extra flavor, you can sprinkle some extra cheddar cheese on top during the last 10 minutes of cooking.
- You can substitute the sirloin steak with another cut of beef like flank steak or chuck roast, depending on your preference.
