This Slow Cooker Steak and Cheddar Potato Casserole is a comforting and savory dish that combines tender sirloin steak, melty cheddar cheese, and layers of soft, thinly sliced potatoes. Slow-cooked to perfection, it’s a hearty meal that’s easy to prepare and packed with flavor!


Ingredients

  • 1 1/2 lbs. sirloin steak, thinly sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp. dried thyme
  • 1 tsp. paprika
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1 cup beef broth
  • 1 cup shredded cheddar cheese
  • 4 large potatoes, peeled and thinly sliced
  • 1/4 cup chopped fresh parsley

Instructions

  • In a slow cooker, combine steak, onion, garlic, thyme, paprika, salt, pepper, and beef broth.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours until the steak is tender.
  • Layer potato slices on top of the steak mixture, sprinkle with cheddar cheese, cover, and cook for an additional 1-2 hours until potatoes are tender.
  • Garnish with chopped parsley before serving.

Notes

  • For extra flavor, you can sprinkle some extra cheddar cheese on top during the last 10 minutes of cooking.
  • You can substitute the sirloin steak with another cut of beef like flank steak or chuck roast, depending on your preference.
