Description

This hearty and flavorful soup combines fresh vegetables, cheese tortellini, and savory herbs, making it a perfect, comforting dish for busy days.


Ingredients

Scale
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 package (9 oz) refrigerated cheese tortellini
  • 2 cups fresh spinach

Instructions

  • In a slow cooker, combine onion, garlic, carrot, celery, crushed tomatoes, vegetable broth, basil, oregano, salt, and pepper.
  • Cover and cook on low for 6-8 hours.
  • Add tortellini and spinach to the slow cooker.
  • Cover and cook on high for an additional 15-20 minutes until the tortellini is cooked through.
  • Serve hot and enjoy!
