- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 can (28 oz) crushed tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 package (9 oz) refrigerated cheese tortellini
- 2 cups fresh spinach
Instructions
- In a slow cooker, combine onion, garlic, carrot, celery, crushed tomatoes, vegetable broth, basil, oregano, salt, and pepper.
- Cover and cook on low for 6-8 hours.
- Add tortellini and spinach to the slow cooker.
- Cover and cook on high for an additional 15-20 minutes until the tortellini is cooked through.
