Description

Crispy on the outside and fluffy on the inside, these Smashed Potatoes are the perfect side dish. Tossed in olive oil, butter, and seasoning, they’re baked to golden perfection and topped with fresh parsley for a beautiful and delicious finish.

For the Potatoes:

  • 700g / 1.4 lb small potatoes (1214 potatoes) or

  • 11.2kg / 2 – 2.4lb medium potatoes (68 potatoes)

For Cooking and Seasoning:

  • 1 tbsp salt (for boiling)

  • 30g / 2 tbsp unsalted butter, melted

  • 1 tbsp olive oil

  • 3/4 tsp salt (for sprinkling)

  • 1/4 tsp black pepper

  • Finely chopped parsley (optional garnish)


Instructions

  • Prepare the Potatoes:

    • Wash and scrub the potatoes well. If using small potatoes, you can leave them whole. For medium potatoes, cut them into halves or quarters to speed up cooking.

  • Boil the Potatoes:

    • In a large pot, fill with water enough to cover the potatoes. Add 1 tablespoon of salt to the water and bring to a boil over medium-high heat. Once the water is boiling, add the potatoes and cook for about 15-20 minutes, or until the potatoes are tender when pierced with a fork.

    • Drain the potatoes and return them to the pot.

  • Smash the Potatoes:

    • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    • Using a potato masher or the bottom of a glass, gently smash each potato until they flatten but still remain in one piece. Space them evenly on the baking sheet.

  • Season and Bake:

    • Drizzle the melted butter and olive oil over the smashed potatoes, ensuring they are well coated. Sprinkle with 3/4 teaspoon of salt and 1/4 teaspoon of black pepper.

    • Bake the potatoes in the preheated oven for about 20-25 minutes, or until the edges become golden brown and crispy.

 

  • Garnish and Serve:

    • Remove from the oven and, if desired, sprinkle with finely chopped parsley for added flavor and color.

    • Serve hot and enjoy!

Notes

  • For an extra touch, you can add garlic powder, Parmesan cheese, or other herbs (like rosemary or thyme) to the butter-oil mixture before drizzling over the potatoes.
