Smothered Chicken and Rice is a comforting one-pan meal where juicy chicken thighs are nestled on a bed of flavorful rice, all baked together with a creamy mushroom sauce. This easy and satisfying dish is perfect for weeknight dinners.


Ingredients

  • 4 chicken thighs
  • 1 cup rice
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can cream of mushroom soup
  • 1 cup chicken broth
  • Salt and pepper to taste

Instructions

  • Preheat oven to 375°F.
  • In a large skillet, brown the chicken thighs on both sides.
  • Remove chicken from skillet and set aside.
  • In the same skillet, sauté the onion, bell pepper, and garlic until softened.
  • Add rice, cream of mushroom soup, and chicken broth to the skillet. Stir to combine.
  • Place the chicken thighs on top of the rice mixture.
  • Cover the skillet with a lid or foil and bake in the preheated oven for 45 minutes or until chicken is cooked through.
  • Serve hot and enjoy!
