- 4 chicken thighs
- 1 cup rice
- 1 onion, diced
- 1 bell pepper, diced

- 1 can cream of mushroom soup
- 1 cup chicken broth

Instructions
- Preheat oven to 375°F.
- In a large skillet, brown the chicken thighs on both sides.
- Remove chicken from skillet and set aside.
- In the same skillet, sauté the onion, bell pepper, and garlic until softened.
- Add rice, cream of mushroom soup, and chicken broth to the skillet. Stir to combine.
- Place the chicken thighs on top of the rice mixture.
- Cover the skillet with a lid or foil and bake in the preheated oven for 45 minutes or until chicken is cooked through.
