Description

This Snowy Pineapple Punch is a delightful tropical beverage, combining the sweetness of pineapple with the richness of coconut and a creamy twist from vanilla ice cream. It’s the perfect drink for any festive occasion or summer gathering, with an irresistibly smooth and refreshing flavor.

Ingredients

Scale
  • 1 can (20 ounces) crushed pineapple, undrained
  • 1 cup coconut milk or cream of coconut
  • 2 cups pineapple juice, chilled
  • 2 cups ginger ale, chilled
  • 1 pint vanilla ice cream
  • 1/4 cup shredded coconut (optional, for garnish)
  • Maraschino cherries (optional, for garnish)

Instructions

  • Blend the Pineapple Base: In a blender, combine the crushed pineapple and coconut milk. Blend until smooth.
  • Mix the Punch: In a large punch bowl or pitcher, combine the pineapple-coconut mixture with the pineapple juice. Stir to mix well.
  • Add the Ginger Ale and Ice Cream: Slowly pour in the chilled ginger ale, stirring gently to preserve the fizz. Scoop the vanilla ice cream into the punch bowl, allowing it to float and melt slightly for a creamy effect.
  • Garnish and Serve: Sprinkle shredded coconut on top for a snowy appearance. Add maraschino cherries for a festive touch if desired. Serve immediately in glasses or punch cups and enjoy the tropical flavors with a creamy twist!

Notes

  • You can adjust the sweetness by adding more or less coconut milk or pineapple juice, depending on your preference.
  • For a non-alcoholic option, this punch is naturally kid-friendly. However, you can easily turn it into a cocktail by adding rum or other spirits for a boozy version.
