This comforting Southern-style chicken and dumplings recipe combines tender chicken, a flavorful broth, and soft, pillowy dumplings. Perfect for a cozy meal, it’s hearty, flavorful, and easy to make. Ideal for a family dinner, this dish is sure to warm you up on any chilly day.

Ingredients

Scale
  • For the Chicken and Broth:

    • 1 tablespoon olive oil

    • 1 medium white onion (diced)

    • 3 cloves garlic (minced)

    • 3 boneless skinless chicken breasts

    • 1 teaspoon salt

    • 1/2 teaspoon black pepper

    • 6 cups chicken broth

    • 2 cups milk (whole or 2%)

    • 1 tablespoon cornstarch

    • 1/4 cup water

  • For the Dumplings:

    • 2 cups all-purpose flour

    • 1/2 teaspoon baking powder

    • 1 teaspoon salt

    • 1/3 cup shortening (cold)

    • 3/4 cup buttermilk

Instructions

  • Cook the Chicken:
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing for about 2-3 minutes until fragrant.

  • Add the chicken breasts to the pot and season with salt and pepper. Cook the chicken for 6-8 minutes on each side, until golden brown and cooked through. Remove the chicken from the pot and set aside to cool slightly.

  • Prepare the Broth:
In the same pot, add the chicken broth and milk, scraping up any browned bits from the bottom of the pot. Bring the mixture to a simmer over medium heat.

  • Thicken the Broth:
In a small bowl, whisk together the cornstarch and water until smooth. Gradually stir this into the simmering broth and let it cook for 5-10 minutes, until the broth thickens.

  • Shred the Chicken:
While the broth is simmering, shred the chicken breasts into bite-sized pieces.

  • Make the Dumplings:
In a medium bowl, mix the flour, baking powder, and salt. Cut in the cold shortening using a pastry cutter or fork until the mixture resembles coarse crumbs. Add the buttermilk and stir until just combined (the dough will be slightly sticky).

  • Add the Chicken and Dumplings to the Broth:
Add the shredded chicken back into the pot with the thickened broth. Drop spoonfuls of the dumpling dough over the broth. Cover the pot and simmer for 15-20 minutes, or until the dumplings are fully cooked and fluffy.

  • Serve hot and enjoy this comforting dish!

Notes

  • You can use chicken thighs instead of breasts for a more flavorful dish.

  • If you prefer a thicker broth, you can add more cornstarch to the broth or simmer it longer.

  • For a little extra flavor, add herbs like thyme or rosemary to the broth.
