Instructions

Cook the Chicken:
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing for about 2-3 minutes until fragrant. -
Add the chicken breasts to the pot and season with salt and pepper. Cook the chicken for 6-8 minutes on each side, until golden brown and cooked through. Remove the chicken from the pot and set aside to cool slightly.

Prepare the Broth:
In the same pot, add the chicken broth and milk, scraping up any browned bits from the bottom of the pot. Bring the mixture to a simmer over medium heat. -
Thicken the Broth:
In a small bowl, whisk together the cornstarch and water until smooth. Gradually stir this into the simmering broth and let it cook for 5-10 minutes, until the broth thickens. -
Shred the Chicken:
While the broth is simmering, shred the chicken breasts into bite-sized pieces. -
Make the Dumplings:
In a medium bowl, mix the flour, baking powder, and salt. Cut in the cold shortening using a pastry cutter or fork until the mixture resembles coarse crumbs. Add the buttermilk and stir until just combined (the dough will be slightly sticky). -
Add the Chicken and Dumplings to the Broth:
Add the shredded chicken back into the pot with the thickened broth. Drop spoonfuls of the dumpling dough over the broth. Cover the pot and simmer for 15-20 minutes, or until the dumplings are fully cooked and fluffy. -
