  • ½ cup evaporated milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground ginger
  • ¼ tsp salt

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C).
  • Prepare the Sweet Potatoes: Boil or bake the sweet potatoes until tender. Once cooled, peel and mash them until smooth.
  • Mix the Filling: In a large bowl, combine the mashed sweet potatoes, softened butter, granulated sugar, and brown sugar. Beat until smooth and creamy.
  • Add the Remaining Ingredients: Stir in the evaporated milk, eggs, vanilla, cinnamon, nutmeg, ginger, and salt. Mix until well combined.
  • Fill the Pie Crust: Pour the sweet potato mixture into the unbaked pie crust.
  • Bake: Bake for 55-60 minutes, or until the filling is set and a knife inserted into the center comes out clean.
