Instructions
- Prepare the polenta: In a medium saucepan, bring the water to a boil. Gradually whisk in the polenta, stirring constantly to avoid clumps. Once combined, reduce heat to low and simmer for 20-30 minutes, stirring occasionally, until the polenta is thick and creamy.
- Make the chickpea curry: In a separate pan, sauté the diced onion and minced garlic until fragrant. Add the chickpeas, cumin, coriander, turmeric, cayenne pepper, salt, and pepper. Cook for about 10 minutes, stirring occasionally, until the flavors are well combined.
- Serve: Spoon the chickpea curry over the creamy polenta. Garnish with fresh cilantro and enjoy!
