This Spinach Artichoke Chicken is a flavorful and healthy dish that brings together tender chicken breasts stuffed with a creamy spinach and artichoke filling. Baked to perfection and topped with mozzarella and Parmesan, it’s a comforting, yet light meal your family will love.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup chopped spinach
  • 1 cup artichoke hearts, chopped
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  • Preheat oven to 375°F (190°C).
  • In a mixing bowl, combine spinach, artichoke hearts, mozzarella cheese, and Parmesan cheese.
  • Cut a pocket into each chicken breast.
  • Stuff each chicken breast with the spinach mixture.
  • Place the stuffed chicken breasts in a baking dish.
  • Bake for 25-30 minutes or until chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  • Serve hot and enjoy!

  • For extra flavor, season the chicken breasts with garlic powder, onion powder, salt, and pepper before stuffing.
