  • 4 chicken breasts
  • 1 tablespoon olive oil or avocado oil
  • 1 teaspoon paprika
  • 1 teaspoon salt (divided)
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 4 ounces cream cheese, softened
  • ¼ cup grated Parmesan
  • 2 tablespoons mayonnaise
  • 1 ½ cups chopped fresh spinach
  • 1 teaspoon garlic, minced
  • ½ teaspoon red pepper flakes

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a bowl, combine the cream cheese, grated Parmesan, mayonnaise, minced garlic, chopped spinach, and red pepper flakes. Mix until fully combined.
  • Cut a pocket into each chicken breast, being careful not to cut all the way through.
  • Stuff each chicken breast with the spinach and cream cheese mixture, then secure the opening with toothpicks.
  • Heat the olive oil in a large oven-safe skillet over medium-high heat. Season the chicken breasts with paprika, salt, garlic powder, and onion powder.
  • Sear the chicken breasts for 2-3 minutes per side until golden brown.
  • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  • Remove from the oven, let it rest for 5 minutes, then remove the toothpicks and serve.

Notes

  • You can substitute the cream cheese with ricotta or a mixture of cream cheese and sour cream for a slightly different texture.
  • If you prefer a spicier kick, add more red pepper flakes or a dash of cayenne pepper.
