For the Muffins:
- 2 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt

- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 cup canned pumpkin puree
- 1/2 cup vegetable oil
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
For the Cream Cheese Filling:
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
For the Topping (optional):
- 1/4 cup granulated sugar
- 1/2 teaspoon ground cinnamon
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease it.
- Prepare the Cream Cheese Filling: In a small bowl, beat together the softened cream cheese, granulated sugar, and vanilla extract until smooth. Set aside.
- Prepare the Muffin Batter: In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger. In another bowl, mix the granulated sugar, brown sugar, pumpkin puree, vegetable oil, eggs, milk, and vanilla extract until well combined. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Assemble the Muffins: Fill each muffin cup about 1/3 full with pumpkin batter. Spoon a generous dollop of cream cheese filling into the center of each muffin, then top with more pumpkin batter, filling each cup about 2/3 full.
- Add Topping (Optional): In a small bowl, mix granulated sugar and ground cinnamon. Sprinkle on top of each muffin.
- Bake the Muffins: Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Serve: Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely. Enjoy with a warm beverage!
