Ingredients

2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
16 oz cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
2 cups heavy cream, whipped
2 cups fresh strawberries, sliced
Additional whipped cream and strawberries for garnish


Instructions

  • Combine the graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan to form the crust.
  • In a mixing bowl, beat the softened cream cheese until smooth. Add the powdered sugar and vanilla extract, mixing until well combined.
  • Fold in the whipped heavy cream until smooth and fluffy.
  • Spread half of the cream cheese mixture over the crust.
  • Layer the sliced strawberries evenly over the cream cheese mixture.
  • Spread the remaining cream cheese mixture over the strawberries.
  • Chill in the refrigerator for at least 4 hours or overnight until set.
  • Before serving, garnish with additional whipped cream and fresh strawberries.

Notes

  • For a more intense strawberry flavor, consider using strawberry puree between the layers.
  • This cake can be made a day in advance for better flavor.
