For the Chicken:

  • 1 egg (for coating the chicken)
  • Sea salt and fresh black pepper, to taste
  • ⅓ cup crushed walnuts
  • ¼ cup seasoned Italian bread crumbs
  • 4 boneless, skinless chicken breasts

For the Strawberry Balsamic Sauce:

  • 1 tablespoon butter
  • ¼ cup yellow onion, minced
  • 1 clove garlic, minced
  • ½ cup balsamic vinegar
  • 1 ½ cups fresh strawberries, chopped (plus more for serving)
  • ½ cup chicken broth
  • 2 tablespoons honey or sugar
  • ½ teaspoon dried thyme
  • ½ teaspoon fresh parsley or basil, chopped (for serving)

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a shallow bowl, whisk the egg and season with a pinch of salt and pepper.
  • In another shallow bowl, combine crushed walnuts and Italian bread crumbs.
  • Dip each chicken breast into the egg mixture, then coat thoroughly with the walnut and breadcrumb mixture.
  • Heat a large skillet over medium-high heat and melt butter. Once hot, add the chicken breasts and cook for 3-4 minutes on each side until golden and crispy. Transfer the chicken to a baking dish and bake in the oven for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  • While the chicken is baking, prepare the strawberry balsamic sauce. In the same skillet, melt the butter over medium heat. Add the minced onion and garlic, cooking until softened and fragrant, about 2-3 minutes.
  • Add the balsamic vinegar, chicken broth, honey (or sugar), and dried thyme to the skillet. Stir to combine and bring to a simmer. Cook for 5-7 minutes, or until the sauce thickens slightly.
  • Add the chopped strawberries to the sauce and cook for another 3-4 minutes, stirring occasionally, until the strawberries soften and release their juices.
  • Once the chicken is cooked, plate it and spoon the strawberry balsamic sauce over the top. Garnish with chopped parsley or basil and extra fresh strawberries if desired.
  • Serve and enjoy!

Notes

  • You can substitute the honey with sugar if you prefer a less floral sweetness.
  • For added texture, toast the walnuts lightly before crushing them.
  • Serve with mashed potatoes, rice, or a fresh salad for a complete meal.
