Description

These crispy, golden-brown chimichangas are filled with a creamy cheesecake mixture and fresh, juicy strawberries. Coated with a sweet cinnamon sugar topping, they make for a decadent and fun dessert that’s sure to impress!


Ingredients

  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup sliced strawberries
  • 8 (8-inch) flour tortillas
  • 1/4 cup melted butter
  • 1/4 cup sugar
  • 1 tsp cinnamon

Instructions

  • In a bowl, mix together the cream cheese, powdered sugar, and vanilla extract until smooth.
  • Spread a spoonful of the cream cheese mixture onto each flour tortilla.
  • Top with sliced strawberries and roll up the tortillas.
  • In a separate bowl, combine the sugar and cinnamon.
  • Brush each rolled tortilla with melted butter and sprinkle with the sugar-cinnamon mixture.
  • Place the chimichangas on a baking sheet and bake at 350°F (175°C) for 20 minutes, or until golden and crispy.
  • Serve warm and enjoy!

Notes

  • For extra flavor, you can drizzle some chocolate or caramel sauce over the chimichangas before serving.
  • If you prefer a fried version, you can fry the chimichangas in oil until golden and crispy instead of baking.
