These Strawberry Cheesecake Bites are a fun and delicious treat! Sweet, fresh strawberries are hollowed out and filled with a creamy cheesecake mixture, topped with a pop of pink sugar sprinkles. A perfect bite-sized dessert that’s both light and indulgent.
Ingredients

10 large strawberries

4 oz. cream cheese, at room temperature (do not substitute 1/3-less fat cream cheese)

2 tablespoons strawberry jam (do not use strawberry preserves, as the chunks can clog the piping tip)

1 1/2 tablespoons confectioner’s sugar

1/8 teaspoon almond extract

1 drop pink food coloring gel or paste (optional)

Pink sugar sprinkles for decoration

Prepare the Strawberries: Rinse the strawberries and remove the stems. Slice a small portion from the bottom of each strawberry so they can stand upright. Hollow out the center of each strawberry with a small knife or melon baller, being careful not to pierce the sides.

Make the Cheesecake Filling: In a medium bowl, beat the cream cheese until smooth and creamy. Add the strawberry jam, confectioner’s sugar, almond extract, and pink food coloring (if using). Mix until fully combined and smooth.

Fill the Strawberries: Transfer the cheesecake mixture into a piping bag fitted with a star tip. Pipe the filling into each hollowed-out strawberry until they are generously filled.

Decorate: Sprinkle pink sugar sprinkles over the tops of the filled strawberries for a decorative touch.
