Description

These Strawberry Cheesecake Bites are a fun and delicious treat! Sweet, fresh strawberries are hollowed out and filled with a creamy cheesecake mixture, topped with a pop of pink sugar sprinkles. A perfect bite-sized dessert that’s both light and indulgent.


Ingredients

  • 10 large strawberries

  • 4 oz. cream cheese, at room temperature (do not substitute 1/3-less fat cream cheese)

  • 2 tablespoons strawberry jam (do not use strawberry preserves, as the chunks can clog the piping tip)

  • 1 1/2 tablespoons confectioner’s sugar

  • 1/8 teaspoon almond extract

  • 1 drop pink food coloring gel or paste (optional)

  • Pink sugar sprinkles for decoration


Instructions

  • Prepare the Strawberries: Rinse the strawberries and remove the stems. Slice a small portion from the bottom of each strawberry so they can stand upright. Hollow out the center of each strawberry with a small knife or melon baller, being careful not to pierce the sides.

  • Make the Cheesecake Filling: In a medium bowl, beat the cream cheese until smooth and creamy. Add the strawberry jam, confectioner’s sugar, almond extract, and pink food coloring (if using). Mix until fully combined and smooth.

  • Fill the Strawberries: Transfer the cheesecake mixture into a piping bag fitted with a star tip. Pipe the filling into each hollowed-out strawberry until they are generously filled.

  • Decorate: Sprinkle pink sugar sprinkles over the tops of the filled strawberries for a decorative touch.

  • Serve: Arrange the filled strawberries on a platter and serve immediately. For best results, refrigerate until ready to serve.
