For the Donuts:

  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup warm milk (110°F/43°C)
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • Vegetable oil, for frying

For the Strawberry Cheesecake Filling:

  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 cup fresh strawberries, chopped
  • 1/2 teaspoon vanilla extract

For the Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/4 teaspoon vanilla extract
  • Additional chopped strawberries, for garnish

Instructions

  • In a small bowl, dissolve the yeast in warm milk and let it sit for 5 minutes until frothy.
  • In a large bowl, mix together the sugar, butter, egg, and vanilla extract. Add the yeast mixture and mix well.
  • Gradually add the flour and salt, mixing until a soft dough forms. Knead the dough on a floured surface for about 5 minutes, until smooth and elastic.
  • Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
  • Punch down the dough and roll it out to 1/2-inch thickness. Cut into circles using a donut cutter or round cookie cutter.
  • Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the donuts in batches, about 1-2 minutes per side, until golden brown. Drain on paper towels.
  • For the filling, beat together the cream cheese, powdered sugar, chopped strawberries, and vanilla extract until smooth and creamy.
  • Once the donuts are cool, use a piping bag to fill each donut with the strawberry cheesecake filling.
  • For the glaze, whisk together the powdered sugar, milk, and vanilla extract. Drizzle over the filled donuts and garnish with additional chopped strawberries for a delightful finish.
