- 2 tbsp heavy cream or milk (for desired consistency)
For the Coating:
- 1/4 cup granulated sugar
- 1 tsp ground cinnamon (optional, for cinnamon sugar coating)
Instructions
- Make the Donuts:
- In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and cinnamon.
- In a separate bowl, beat together the milk, eggs, melted butter, vanilla extract, and almond extract (if using).
- Add the wet ingredients to the dry ingredients and mix until just combined, being careful not to overmix.
- If frying, heat the vegetable oil in a deep pan to 350°F (175°C). If baking, preheat the oven to 375°F (190°C) and grease a donut pan.
- For frying: Use a spoon or donut cutter to drop spoonfuls of the donut batter into the hot oil, frying for about 2-3 minutes on each side until golden brown. For baking: Spoon the batter into the donut pan and bake for 10-12 minutes or until golden.
- Remove the donuts from the oil or pan and let them cool slightly on a wire rack.
- Make the Strawberry Cheesecake Filling:
- In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until smooth and creamy.
- Stir in the strawberry jam (or chopped strawberries) and heavy cream or milk to adjust the consistency to your preference. The filling should be thick but pipeable.
- Coat the Donuts:
- In a small bowl, mix together the granulated sugar and ground cinnamon.
- While the donuts are still slightly warm, roll them in the cinnamon-sugar mixture, ensuring they are evenly coated.
- Stuff the Donuts:
- Use a pastry bag or a small spoon to carefully stuff each donut with the strawberry cheesecake filling. If you have a piping tip, you can use it to make a small hole in the side of the donut and pipe the filling inside.
