Description

These soft, fluffy donuts are filled with a rich and creamy strawberry cheesecake filling, making them the perfect indulgent treat for breakfast or dessert. Coated in a sweet cinnamon-sugar mix, these donuts bring together the comforting flavors of cheesecake and fresh strawberries in a fun, fried (or baked) donut form!

For the Donuts:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp ground cinnamon
  • 1/2 cup milk
  • 2 large eggs
  • 4 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract (optional)
  • Vegetable oil (for frying, or use a donut pan if baking)

For the Strawberry Cheesecake Filling:

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/4 cup strawberry jam (or fresh strawberries, chopped finely)
  • 2 tbsp heavy cream or milk (for desired consistency)

For the Coating:

  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon (optional, for cinnamon sugar coating)

Instructions

  • Make the Donuts:
    • In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and cinnamon.
    • In a separate bowl, beat together the milk, eggs, melted butter, vanilla extract, and almond extract (if using).
    • Add the wet ingredients to the dry ingredients and mix until just combined, being careful not to overmix.
    • If frying, heat the vegetable oil in a deep pan to 350°F (175°C). If baking, preheat the oven to 375°F (190°C) and grease a donut pan.
    • For frying: Use a spoon or donut cutter to drop spoonfuls of the donut batter into the hot oil, frying for about 2-3 minutes on each side until golden brown. For baking: Spoon the batter into the donut pan and bake for 10-12 minutes or until golden.
    • Remove the donuts from the oil or pan and let them cool slightly on a wire rack.
  • Make the Strawberry Cheesecake Filling:
    • In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until smooth and creamy.
    • Stir in the strawberry jam (or chopped strawberries) and heavy cream or milk to adjust the consistency to your preference. The filling should be thick but pipeable.
  • Coat the Donuts:
    • In a small bowl, mix together the granulated sugar and ground cinnamon.
    • While the donuts are still slightly warm, roll them in the cinnamon-sugar mixture, ensuring they are evenly coated.
  • Stuff the Donuts:
    • Use a pastry bag or a small spoon to carefully stuff each donut with the strawberry cheesecake filling. If you have a piping tip, you can use it to make a small hole in the side of the donut and pipe the filling inside.
  • Serve: Enjoy these freshly stuffed strawberry cheesecake donuts as a delicious breakfast, dessert, or sweet snack!

Notes

  • If you prefer a less sweet coating, you can skip the cinnamon and just roll the donuts in plain sugar.
