Ingredients

Scale

For the Filling:

  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/4 cup diced fresh strawberries

For the French Toast:

  • 4–6 slices of thick bread (like brioche or challah)
  • 2 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon (optional)
  • Butter for cooking

For Topping:

  • Powdered sugar for dusting
  • Sliced fresh strawberries
  • Maple syrup or strawberry syrup

Instructions

  • Prepare the Filling:
    • In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
    • Gently fold in the diced strawberries. Set aside.
  • Assemble the French Toast:
    • Take two slices of bread and spread a generous layer of the cream cheese mixture on one slice.
    • Top with the second slice, gently pressing them together to form a sandwich. Repeat with remaining bread slices.
  • Prepare the Batter:
    • In a shallow dish, whisk together the eggs, milk, vanilla extract, and cinnamon if using.
  • Cook the French Toast:
    • Preheat a skillet or griddle over medium heat and add a small amount of butter.
    • Dip each stuffed sandwich into the egg mixture, coating both sides well.
    • Place on the skillet and cook for 3-4 minutes per side, or until golden brown and cooked through. Adjust heat as needed to avoid burning.
  • Serve:
    • Dust the French toast with powdered sugar, top with sliced strawberries, and drizzle with syrup if desired.
    • Serve warm and enjoy!

Notes

  • For a more intense strawberry flavor, add a few spoonfuls of strawberry preserves to the filling.
  • Serve immediately after cooking to keep the filling creamy and the toast warm.
