Instructions
- Prepare the Crust:
- Preheat your oven to 325°F (163°C). In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated. Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove from the oven and let cool.
- Make the Cheesecake Filling:
- In a large mixing bowl, beat the cream cheese until smooth. Add granulated sugar and vanilla extract, and continue to beat until creamy. Add eggs one at a time, beating well after each addition. Mix in sour cream and heavy cream until fully incorporated. Melt the semi-sweet chocolate in a microwave or double boiler, then fold it into the cream cheese mixture until well blended.
- Bake the Cheesecake:
- Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula. Bake in the preheated oven for 60-70 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour. Remove from the oven and refrigerate for at least 4 hours or overnight.
- Prepare the Strawberry Topping:
- In a medium bowl, combine sliced strawberries, granulated sugar, and lemon juice. Toss gently to coat the strawberries. Let the mixture sit for at least 30 minutes to allow the flavors to meld.
- Serve:
