Strawberry Cream Filling

  • 1/2 cup fresh strawberry puree (made from ripe strawberries)
  • 2 tbsp powdered sugar
  • 1/4 cup heavy cream
  • 2 tbsp unsalted butter
  • 1/2 tsp vanilla extract

Instructions

  1. Prepare the Strawberry Cream Filling: Gently heat the fresh strawberry puree and powdered sugar over low heat. Once the sugar dissolves and the mixture is warm, remove from heat. Whisk in the heavy cream, unsalted butter, and vanilla extract until the mixture is silky and smooth. Allow it to cool to room temperature to achieve the perfect creamy texture for filling.
  2. Melt the White Chocolate: Chop the white chocolate into small, even pieces for smooth melting. Melt the chocolate using a double boiler or microwave in short intervals, stirring frequently to prevent burning until fully melted and glossy.
  3. Create the Chocolate Shells: Using a silicone mold or lined tray, pour or spoon a thin layer of melted white chocolate to form the outer shells. Place in the refrigerator to slightly set but not fully harden, leaving enough room for the filling.
  4. Fill with Strawberry Cream: Pipe or spoon the cooled strawberry cream filling evenly into each chocolate shell portion, being careful to avoid overflow.
  5. Seal and Set: Cover each filled chocolate with another layer of melted white chocolate, sealing the strawberry cream inside. Refrigerate for at least one hour until chocolates are firm and can be easily removed from molds.
