Strawberry Crunch Banana Pudding combines creamy vanilla pudding, ripe bananas, and a crunchy strawberry-flavored graham cracker topping. This dessert offers a delightful mix of smooth, rich pudding with a satisfying crunch, perfect for any occasion.

Ingredients

Scale

For the Pudding:

  • 2 cups milk
  • 1 (5.1 oz) package instant vanilla pudding mix
  • 1 (8 oz) package cream cheese, softened
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 4 ripe bananas, sliced

For the Strawberry Crunch Topping:

  • 1 cup crushed strawberry-flavored graham crackers (about 1012 crackers)
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For Garnish:

  • Fresh strawberries (optional)

Instructions

  • In a large bowl, whisk together the milk and instant vanilla pudding mix until well combined. Let it sit for about 5 minutes to thicken.
  • In another bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar and beat until combined.
  • Gently fold the cream cheese mixture into the pudding mixture until smooth and well combined.
  • In a separate bowl, whip the heavy cream until stiff peaks form. Fold the whipped cream into the pudding mixture until fully incorporated.
  • Layer the pudding mixture with sliced bananas in a serving dish or individual cups.
  • For the strawberry crunch topping, combine the crushed graham crackers, granulated sugar, and melted butter in a bowl. Mix until the crumbs are well-coated with butter.
  • Sprinkle the strawberry crunch topping evenly over the pudding layers.
  • Chill the pudding in the refrigerator for at least 2 hours before serving.
  • Garnish with fresh strawberries if desired before serving.

Notes

For added flavor, try using a mix of fresh berries or a layer of strawberry sauce between the bananas and pudding.
