Description

Delight in this Strawberry Crunch Cheesecake, featuring a creamy vanilla base swirled with sweet strawberry preserves and topped with a crunchy layer of freeze-dried strawberries for an irresistible dessert!


Ingredients

  • 2 cups vanilla wafer crumbs
  • 1/4 cup melted butter
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/2 cup strawberry preserves
  • 1 cup crushed freeze-dried strawberries

Instructions

  • Preheat oven to 325°F (160°C) and grease a springform pan.
  • Mix vanilla wafer crumbs and melted butter, pressing the mixture into the bottom of the pan to form the crust.
  • In a large bowl, beat the cream cheese, sugar, and vanilla until smooth. Add eggs, one at a time, mixing until fully incorporated.
  • Pour the batter over the crust, then swirl in the strawberry preserves with a knife or spatula.
  • Bake for 45 minutes, or until the center is set but still slightly jiggly. Remove from the oven and let cool.
  • Once cooled, top with crushed freeze-dried strawberries before serving.

Notes

This cheesecake can be made a day ahead for better flavor. Serve with fresh strawberries or whipped cream for extra indulgence.
