- 2 cups vanilla wafer crumbs
- 1/4 cup melted butter
- 16 oz cream cheese, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 2 large eggs
- 1/2 cup strawberry preserves
- 1 cup crushed freeze-dried strawberries
Instructions
- Preheat oven to 325°F (160°C) and grease a springform pan.
- Mix vanilla wafer crumbs and melted butter, pressing the mixture into the bottom of the pan to form the crust.
- In a large bowl, beat the cream cheese, sugar, and vanilla until smooth. Add eggs, one at a time, mixing until fully incorporated.
- Pour the batter over the crust, then swirl in the strawberry preserves with a knife or spatula.
- Bake for 45 minutes, or until the center is set but still slightly jiggly. Remove from the oven and let cool.
- Once cooled, top with crushed freeze-dried strawberries before serving.
