For the Cake:
- 2 1/2 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 3/4 cups granulated sugar
- 4 large eggs
- 1 cup whole milk
- 2 teaspoons vanilla extract
- 1/2 cup strawberry puree
For the Strawberry Buttercream:
- 1 cup unsalted butter, softened
- 4 cups powdered sugar, sifted
- 1/4 cup strawberry puree
- 1 teaspoon vanilla extract
For the Drip and Decoration:
- 1/2 cup strawberry preserves, warmed
- Fresh strawberries for decoration
Instructions
- Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then mix in vanilla extract.
- Add dry ingredients to the butter mixture alternately with milk, beginning and ending with dry ingredients. Fold in strawberry puree until well combined.
- Divide batter evenly among prepared pans. Smooth tops with a spatula.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Cool cakes in pans for 10 minutes, then turn out onto wire racks to cool completely.
- For the strawberry buttercream, beat butter until creamy. Gradually add powdered sugar, alternating with strawberry puree and vanilla extract. Beat until smooth and fluffy.
- Place one cake layer on a serving plate or cake stand. Spread with a layer of strawberry buttercream. Repeat with remaining layers.
- Use remaining buttercream to frost the top and sides of the cake.
- Pour warmed strawberry preserves over the top edge of the cake, allowing it to drip down the sides.
- Decorate with fresh strawberries as desired.
Notes
Ensure the cakes are completely cooled before frosting to prevent melting the buttercream.
