For the Cake:

  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 large eggs
  • 1 cup whole milk
  • 2 teaspoons vanilla extract
  • 1/2 cup strawberry puree

For the Strawberry Buttercream:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar, sifted
  • 1/4 cup strawberry puree
  • 1 teaspoon vanilla extract

For the Drip and Decoration:

  • 1/2 cup strawberry preserves, warmed
  • Fresh strawberries for decoration

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  • In a medium bowl, whisk together flour, baking powder, and salt.
  • In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then mix in vanilla extract.
  • Add dry ingredients to the butter mixture alternately with milk, beginning and ending with dry ingredients. Fold in strawberry puree until well combined.
  • Divide batter evenly among prepared pans. Smooth tops with a spatula.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool cakes in pans for 10 minutes, then turn out onto wire racks to cool completely.
  • For the strawberry buttercream, beat butter until creamy. Gradually add powdered sugar, alternating with strawberry puree and vanilla extract. Beat until smooth and fluffy.
  • Place one cake layer on a serving plate or cake stand. Spread with a layer of strawberry buttercream. Repeat with remaining layers.
  • Use remaining buttercream to frost the top and sides of the cake.
  • Pour warmed strawberry preserves over the top edge of the cake, allowing it to drip down the sides.
  • Decorate with fresh strawberries as desired.

Notes

Ensure the cakes are completely cooled before frosting to prevent melting the buttercream.
