Description

These Strawberry Oatmeal Crumble Bars are a perfect blend of sweet, juicy strawberries and a buttery, oat-filled crust and crumble topping. They make a delightful snack, dessert, or even a fruity breakfast bar. Easy to make and bursting with flavor, these bars are a great way to use fresh strawberries during the season.

Crust and Crumble Topping:

  • ½ cup unsalted butter, melted

  • 1 cup all-purpose flour

  • ¾ cup old-fashioned oats

  • ½ cup granulated sugar

  • ¼ cup light brown sugar, packed

  • ½ teaspoon salt, or to taste

Strawberry Layer:

  • 2 cups coarsely chopped fresh strawberries

  • ⅓ cup granulated sugar

  • 2 tablespoons lemon juice

  • 2 teaspoons cornstarch


Instructions

  • Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.

  • Make the crust/crumble mixture:
    In a medium bowl, combine melted butter, flour, oats, granulated sugar, brown sugar, and salt. Stir until a crumbly dough forms.

  • Press the crust:
    Set aside about ¾ cup of the mixture for the topping. Press the remaining mixture evenly into the bottom of the prepared pan to form the crust.

  • Make the strawberry layer:
    In another bowl, toss chopped strawberries with sugar, lemon juice, and cornstarch until well coated.

  • Assemble the bars:
    Spread the strawberry mixture evenly over the crust. Sprinkle the reserved oat mixture on top as the crumble layer.

  • Bake:
    Bake for 35–40 minutes, or until the topping is golden brown and the filling is bubbly.

 

  • Cool and serve:
    Allow the bars to cool completely in the pan before slicing. For cleaner cuts, chill in the refrigerator before serving.

Notes

  • You can substitute frozen strawberries (thawed and drained) if fresh are not available.

  • For extra flavor, add a pinch of cinnamon to the crumble mixture.

  • Store bars in an airtight container at room temperature for 2 days or refrigerate for up to 5 days.
