These Strawberry Oatmeal Crumble Bars are a perfect blend of sweet, juicy strawberries and a buttery, oat-filled crust and crumble topping. Ingredients
Crust and Crumble Topping:

½ cup unsalted butter, melted

1 cup all-purpose flour

¾ cup old-fashioned oats

½ cup granulated sugar

¼ cup light brown sugar, packed

½ teaspoon salt, or to taste
Strawberry Layer:

2 cups coarsely chopped fresh strawberries

⅓ cup granulated sugar

2 tablespoons lemon juice

2 teaspoons cornstarch
Instructions

Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.

Make the crust/crumble mixture:
In a medium bowl, combine melted butter, flour, oats, granulated sugar, brown sugar, and salt. Stir until a crumbly dough forms. -
Press the crust:
Set aside about ¾ cup of the mixture for the topping. Press the remaining mixture evenly into the bottom of the prepared pan to form the crust. -
Make the strawberry layer:
In another bowl, toss chopped strawberries with sugar, lemon juice, and cornstarch until well coated. -
Assemble the bars:
Spread the strawberry mixture evenly over the crust. Sprinkle the reserved oat mixture on top as the crumble layer. -
Bake:
Bake for 35–40 minutes, or until the topping is golden brown and the filling is bubbly.

Cool and serve:
Allow the bars to cool completely in the pan before slicing. For cleaner cuts, chill in the refrigerator before serving.
Notes

You can substitute frozen strawberries (thawed and drained) if fresh are not available.

For extra flavor, add a pinch of cinnamon to the crumble mixture.
