  • 1 box strawberry cake mix
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup water
  • 1 box instant vanilla pudding mix
  • 2 cups cold milk
  • 1/2 cup strawberry jam
  • 1 cup fresh strawberries, sliced
  • 1 tub whipped topping
  • Additional fresh strawberries, whole and sliced, for decoration
  • Fresh mint leaves for garnish

Instructions

  • Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  • In a large bowl, combine the strawberry cake mix, eggs, vegetable oil, and water. Mix until the batter is smooth.
  • Pour the batter into the prepared baking dish and bake according to the cake mix instructions, or until a toothpick inserted into the center comes out clean.
  • While the cake is baking, whisk together the instant vanilla pudding mix and cold milk until thickened.
  • Once the cake is baked, let it cool for 10 minutes. Use the handle of a wooden spoon to poke holes throughout the cake.
  • Pour the prepared vanilla pudding over the cake, ensuring the pudding seeps into the holes.
  • Spread the strawberry jam evenly over the pudding layer.
  • Top with sliced fresh strawberries.
  • Evenly spread the whipped topping over the entire cake.
  • Decorate with additional whole and sliced fresh strawberries for an attractive look.
  • Garnish with fresh mint leaves.
  • Refrigerate for at least 2 hours before serving to allow the flavors to meld and the cake to set.
