This classic Strawberry Shortcake is a perfect dessert for any occasion. Fresh, juicy strawberries are paired with fluffy, golden shortcake biscuits and topped with creamy whipped cream for a deliciously sweet treat.


Ingredients

  • 2 cups all-purpose flour
  • 1/3 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 2 cups sliced fresh strawberries
  • Whipped cream, for serving

Instructions

  • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • Add the cold butter to the flour mixture and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
  • Stir in the heavy cream and vanilla extract until the dough comes together.
  • Turn the dough out onto a lightly floured surface and knead gently until it forms a smooth ball.
  • Pat the dough into a 1-inch thick round and cut out circles using a biscuit cutter.
  • Place the dough circles onto the prepared baking sheet and bake for 12-15 minutes, or until golden brown.
  • Let the shortcakes cool slightly before assembling.
  • To assemble, slice the shortcakes in half horizontally, top with sliced strawberries, whipped cream, and then the top half of the shortcake.
  • Serve and enjoy!

Notes

  • You can substitute the heavy cream with a non-dairy option if preferred.
  • Fresh strawberries can be macerated with a little sugar for extra sweetness.
