These soft, golden-brown cookies are filled with cinnamon-sugar goodness, offering the best of both churros and cookies in one sweet treat!


Ingredients

  • 1 cup unsalted butter
  • 1 cup water
  • 2 cups all-purpose flour
  • 2 tsp ground cinnamon
  • 1/4 tsp salt
  • 4 eggs
  • 2 cups sugar
  • 2 tsp vanilla extract
  • 1/2 cup sugar (for coating)
  • 1 tsp ground cinnamon (for coating)

Instructions

  • Preheat oven to 350°F (175°C). In a medium saucepan, combine butter and water. Bring to a boil, then remove from heat. Stir in flour, 2 tsp cinnamon, and salt until the mixture forms a ball.
  • Beat in eggs one at a time, mixing well after each. Drop by spoonfuls onto an ungreased baking sheet.
  • Bake for 25-30 minutes in the preheated oven, or until golden brown.
  • Combine 2 cups sugar and 1 tsp cinnamon. Roll hot cookies in the cinnamon-sugar mixture.

Notes

  • For a stuffed variation, you can add a filling of your choice (chocolate, cream cheese, or dulce de leche) before baking.
  • Ensure the cookies are hot when rolling in cinnamon sugar to get the best coating.
