This hearty casserole brings the flavors of stuffed peppers together in an easy-to-make dish. Ground beef, peppers, tomatoes, rice, and melted cheddar cheese create a comforting, savory meal perfect for any night of the week.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large skillet, cook ground beef and onion over medium heat until beef is browned. Drain any excess grease.
  • Add green and red bell peppers to the skillet and cook until peppers are tender.
  • Stir in diced tomatoes, tomato sauce, cooked rice, salt, and pepper. Cook for 5 minutes.
  • Transfer mixture to a greased baking dish and top with shredded cheddar cheese.
  • Bake in the preheated oven for 25 minutes, or until cheese is melted and bubbly.
  • Serve hot and enjoy!

Notes

  • Feel free to swap the ground beef with ground turkey or chicken for a leaner version.
  • You can use brown rice for a heartier, fiber-rich option.
