- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 1 cup cooked rice
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet, cook ground beef and onion over medium heat until beef is browned. Drain any excess grease.
- Add green and red bell peppers to the skillet and cook until peppers are tender.
- Stir in diced tomatoes, tomato sauce, cooked rice, salt, and pepper. Cook for 5 minutes.
- Transfer mixture to a greased baking dish and top with shredded cheddar cheese.
- Bake in the preheated oven for 25 minutes, or until cheese is melted and bubbly.
