  • 4 large bell peppers
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 can (14 oz) diced tomatoes
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 1 cup shredded cheese

Instructions

  • Preheat the Oven: Preheat your oven to 375°F (190°C).
  • Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes.
  • Cook the Beef: In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Make the Filling: Add the cooked rice, diced tomatoes, garlic powder, onion powder, Italian seasoning, salt, and pepper to the skillet with the beef. Stir to combine and heat through.
  • Stuff the Peppers: Stuff the bell peppers with the beef and rice mixture, pressing the filling down gently.
  • Bake: Place the stuffed peppers in a baking dish. Cover with foil and bake for 25 minutes.
  • Add Cheese: Remove the foil, sprinkle the shredded cheese on top of the peppers, and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  • Serve: Serve hot and enjoy!

Notes

  • You can substitute the ground beef with ground turkey or chicken for a leaner version.
  • For a spicier kick, add some chopped jalapeños or hot sauce to the filling.
