- 2 slices of bread
- 2 tbsp butter
- 1/4 cup ricotta cheese
- 1/4 cup sun-dried tomatoes
- 1/2 cup fresh spinach
- 1/4 cup shredded mozzarella cheese
Instructions
- Spread butter on one side of each slice of bread.
- On the unbuttered side of one slice, spread ricotta cheese.
- Top with sun-dried tomatoes, spinach, and shredded mozzarella cheese.
- Place the other slice of bread on top, buttered side facing out.
- Heat a skillet over medium heat and place the sandwich in the skillet.
- Cook for 3-4 minutes on each side, until the bread is golden brown and the cheese is melted.
- Serve hot and enjoy!
