This Ricotta & Sun-Dried Tomato Grilled Cheese takes the classic grilled cheese to a whole new level with the creamy ricotta, tangy sun-dried tomatoes, and fresh spinach. Topped with melty mozzarella, this sandwich is a delightful combination of flavors that’s perfect for lunch or a quick snack.


Ingredients

  • 2 slices of bread
  • 2 tbsp butter
  • 1/4 cup ricotta cheese
  • 1/4 cup sun-dried tomatoes
  • 1/2 cup fresh spinach
  • 1/4 cup shredded mozzarella cheese

Instructions

  • Spread butter on one side of each slice of bread.
  • On the unbuttered side of one slice, spread ricotta cheese.
  • Top with sun-dried tomatoes, spinach, and shredded mozzarella cheese.
  • Place the other slice of bread on top, buttered side facing out.
  • Heat a skillet over medium heat and place the sandwich in the skillet.
  • Cook for 3-4 minutes on each side, until the bread is golden brown and the cheese is melted.
  • Serve hot and enjoy!

Notes

  • You can add garlic powder or herbs like basil to enhance the flavor of the ricotta.
  • Try using sourdough or whole-grain bread for a different texture and taste.
  • If you like extra crunch, add some crispy bacon to the sandwich before grilling.
