Ingredients

  • For the Crust:
    • 2 cups all-purpose flour
    • 1/2 cup granulated sugar
    • 1/2 cup unsalted butter, softened
    • 1/4 teaspoon salt
  • For the Peach Filling:
    • 4 large peaches, peeled and sliced
    • 1/2 cup brown sugar
    • 1 tablespoon cornstarch
    • 1 teaspoon ground cinnamon
    • 1 teaspoon vanilla extract
  • For the Glaze:
    • 1/4 cup powdered sugar
    • 2 tablespoons milk
    • 1 teaspoon lemon juice

Instructions

  • Preheat your oven to 350°F (175°C) and line a 9×13 inch baking dish with parchment paper.
  • In a medium bowl, mix together the flour, granulated sugar, softened butter, and salt until crumbly. Press firmly into the bottom of the prepared baking dish to form a crust.
  • In another bowl, toss the sliced peaches with brown sugar, cornstarch, cinnamon, and vanilla until evenly coated. Spread the peach mixture over the crust.
  • Bake for 40-45 minutes, or until the crust is golden and the peach mixture is bubbling.
  • While baking, whisk together the powdered sugar, milk, and lemon juice in a small bowl until smooth.
  • Once baked, cool completely in the dish, then drizzle the glaze over the top.
  • Cut into squares and serve.

Notes

  • For extra texture, consider adding chopped nuts (like almonds or pecans) to the crust mixture.
  • To make it vegan, substitute the butter with a plant-based alternative and use non-dairy milk for the glaze.
