- 2 lbs chicken breast
- 1 cup pineapple juice
- 1/2 cup soy sauce
- 1/2 cup ketchup
- 1/3 cup brown sugar
- 1/3 cup honey
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 can pineapple chunks, drained
Instructions
- Place chicken breast in the crockpot.
- In a bowl, mix together pineapple juice, soy sauce, ketchup, brown sugar, honey, and garlic. Pour over chicken.
- Add red bell pepper and pineapple chunks to the crockpot.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Serve over rice and enjoy!
Notes
- For a thicker sauce, you can remove the chicken and simmer the sauce in a saucepan until reduced before serving.
- Garnish with green onions or sesame seeds for added flavor and presentation.
