A flavorful and easy-to-make dish featuring tender chicken cooked in a sweet and tangy Hawaiian-inspired sauce. Perfect for busy weeknights and serves beautifully over rice!


Ingredients

  • 2 lbs chicken breast
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/2 cup ketchup
  • 1/3 cup brown sugar
  • 1/3 cup honey
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 can pineapple chunks, drained

Instructions

  • Place chicken breast in the crockpot.
  • In a bowl, mix together pineapple juice, soy sauce, ketchup, brown sugar, honey, and garlic. Pour over chicken.
  • Add red bell pepper and pineapple chunks to the crockpot.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • Serve over rice and enjoy!

Notes

  • For a thicker sauce, you can remove the chicken and simmer the sauce in a saucepan until reduced before serving.
  • Garnish with green onions or sesame seeds for added flavor and presentation.
