Description

This Sweet Hawaiian Crockpot Chicken is a delicious, tropical-inspired dish with tender chicken breasts cooked in a flavorful sauce made from pineapple juice, soy sauce, and honey. Serve it over rice for a satisfying, easy meal.

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/2 cup ketchup
  • 1/3 cup brown sugar
  • 1/3 cup honey
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Cooked rice, for serving
  • Green onions, chopped for garnish

Instructions

  • Place the chicken breasts in the crockpot.
  • In a mixing bowl, combine pineapple juice, soy sauce, ketchup, brown sugar, honey, garlic, and ginger. Mix well until the sugar is dissolved.
  • Pour the sauce over the chicken breasts in the crockpot, making sure the chicken is well coated.
  • Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is cooked through and tender.
  • Once cooked, shred the chicken with two forks and stir the sauce to combine.
  • Serve the chicken over cooked rice and garnish with chopped green onions.

Notes

  • You can use chicken thighs instead of breasts for a more flavorful, juicy result.
  • For added texture, you can stir in some diced bell peppers or pineapple chunks during the last 30 minutes of cooking.
  • Make sure to check the chicken for doneness; it should reach an internal temperature of 165°F.
