- 1 cup pineapple juice
- 1/2 cup soy sauce
- 1/2 cup ketchup
- 1/3 cup brown sugar
- 1/3 cup honey
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- Cooked rice, for serving
- Green onions, chopped for garnish
Instructions
- Place the chicken breasts in the crockpot.
- In a mixing bowl, combine pineapple juice, soy sauce, ketchup, brown sugar, honey, garlic, and ginger. Mix well until the sugar is dissolved.
- Pour the sauce over the chicken breasts in the crockpot, making sure the chicken is well coated.
- Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is cooked through and tender.
- Once cooked, shred the chicken with two forks and stir the sauce to combine.
- Serve the chicken over cooked rice and garnish with chopped green onions.
Notes
- You can use chicken thighs instead of breasts for a more flavorful, juicy result.
- For added texture, you can stir in some diced bell peppers or pineapple chunks during the last 30 minutes of cooking.
