These Sweet Strawberry Shortcake Cheesecake Rolls are a delightful dessert that combines the rich, creamy flavor of cheesecake with the freshness of strawberries. Wrapped in soft flour tortillas and topped with a shortcake crumble, these rolls are the perfect treat for any occasion, easy to prepare, and sure to impress your guests.

For the Rolls:

  • 1 package (8 oz) cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 cup powdered sugar (for dusting)
  • 1/2 cup heavy whipping cream, whipped to stiff peaks
  • 1 cup fresh strawberries, diced

For the Shortcake Crumb Topping:

  • 1 cup crushed vanilla wafers or shortbread cookies
  • 2 tbsp unsalted butter, melted
  • 2 tbsp strawberry gelatin powder

For Assembly:

  • 68 large flour tortillas

Instructions

  • In a medium bowl, combine the softened cream cheese, granulated sugar, and vanilla extract. Mix until smooth and well-combined.
  • In a separate bowl, whip the heavy whipping cream to stiff peaks. Carefully fold the whipped cream into the cream cheese mixture until fully incorporated.
  • Gently fold in the diced strawberries to the cream cheese mixture. Set aside.
  • In another bowl, combine the crushed vanilla wafers (or shortbread cookies), melted butter, and strawberry gelatin powder. Stir until everything is well mixed.
  • Lay the flour tortillas flat and evenly spread the cheesecake mixture over each one.
  • Sprinkle the shortcake crumb topping generously over the cheesecake layer.
  • Carefully roll up each tortilla, ensuring the filling stays inside.
  • Dust the outside of the rolls with powdered sugar.
  • Slice the rolls into bite-sized pieces and serve chilled.

Notes

  • Make sure the heavy cream is whipped to stiff peaks for the best texture in the rolls.
  • You can also use graham crackers instead of vanilla wafers for a different flavor.
  • Refrigerate the rolls for at least 30 minutes before serving to help the cheesecake mixture set.
