For the Rolls:
- 1 package (8 oz) cream cheese, softened
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1/4 cup powdered sugar (for dusting)
- 1/2 cup heavy whipping cream, whipped to stiff peaks
- 1 cup fresh strawberries, diced
For the Shortcake Crumb Topping:
- 1 cup crushed vanilla wafers or shortbread cookies
- 2 tbsp unsalted butter, melted
- 2 tbsp strawberry gelatin powder
For Assembly:
- 6–8 large flour tortillas
Instructions
- In a medium bowl, combine the softened cream cheese, granulated sugar, and vanilla extract. Mix until smooth and well-combined.
- In a separate bowl, whip the heavy whipping cream to stiff peaks. Carefully fold the whipped cream into the cream cheese mixture until fully incorporated.
- Gently fold in the diced strawberries to the cream cheese mixture. Set aside.
- In another bowl, combine the crushed vanilla wafers (or shortbread cookies), melted butter, and strawberry gelatin powder. Stir until everything is well mixed.
- Lay the flour tortillas flat and evenly spread the cheesecake mixture over each one.
- Sprinkle the shortcake crumb topping generously over the cheesecake layer.
- Carefully roll up each tortilla, ensuring the filling stays inside.
- Dust the outside of the rolls with powdered sugar.
- Slice the rolls into bite-sized pieces and serve chilled.
Notes
- Make sure the heavy cream is whipped to stiff peaks for the best texture in the rolls.
