Description

This Tex-Mex Sweet Potato Hash is a hearty and flavorful one-pan meal featuring seasoned ground beef, sweet potatoes, and a colorful mix of veggies. Top with your favorite garnishes like avocado, fried egg, or cheese for an extra delicious touch!


Ingredients

  • 1 lb. ground beef

  • 3 tablespoons taco seasoning (homemade or store-bought)

  • 1/2 cup water

  • 1 tablespoon olive oil or avocado oil

  • 1 medium sweet potato, peeled and cut into small cubes (about 3 cups)

  • 1 sweet bell pepper, diced (red, yellow, or orange)

  • 1/2 medium red onion, diced

  • 2 cups diced mushrooms, chopped

  • 23 cups spinach, roughly chopped

Optional Toppings:

  • Fresh cilantro

  • Green onions

  • Avocado

  • Guacamole

  • Jalapeños

  • Fried egg

  • Sour cream

  • Mexican blend cheese or cotija cheese (omit sour cream and cheese if dairy-free or Whole30)


Instructions

  • Cook the Ground Beef:

    • In a large skillet, heat 1 tablespoon of olive oil or avocado oil over medium heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and fully cooked, about 5–7 minutes.

    • Stir in the taco seasoning and water. Cook for another 2–3 minutes until the beef is well coated and the sauce thickens. Set the beef aside.

  • Prepare the Sweet Potato Hash:

    • In the same skillet, add a little more oil if needed, and toss in the sweet potato cubes. Cook, stirring occasionally, for 10–12 minutes until the sweet potatoes are tender and lightly browned.

  • Add the Veggies:

    • Add the diced bell pepper, red onion, and mushrooms to the skillet with the sweet potatoes. Cook for another 5–7 minutes, stirring occasionally, until the vegetables are tender.

  • Add Spinach:

    • Stir in the chopped spinach and cook for an additional 2–3 minutes, just until the spinach wilts.

  • Combine the Beef and Veggies:

    • Add the cooked ground beef back into the skillet and stir everything together. Cook for an additional 2 minutes to combine the flavors.

 

  • Serve and Add Toppings:

    • Serve the hash hot, and garnish with your choice of optional toppings such as cilantro, green onions, avocado, fried egg, guacamole, jalapeños, sour cream, and cheese.

Notes

  • For a dairy-free or Whole30 version, skip the sour cream and cheese.

  • You can make this recipe ahead of time and store it in the fridge for up to 3 days. Reheat before serving.
