Ingredients

1 lb. ground beef

3 tablespoons taco seasoning (homemade or store-bought)

1/2 cup water

1 tablespoon olive oil or avocado oil

1 medium sweet potato, peeled and cut into small cubes (about 2½ – 3 cups)

1 sweet bell pepper, diced (red, yellow, or orange)

1/2 medium red onion, diced

1½–2 cups diced mushrooms, chopped

2–3 cups spinach, roughly chopped

Mexican blend cheese or cotija cheese (omit sour cream and cheese if dairy-free or Whole30)
Instructions

Cook the Ground Beef:

In a large skillet, heat 1 tablespoon of olive oil or avocado oil over medium heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and fully cooked, about 5–7 minutes.

Stir in the taco seasoning and water. Cook for another 2–3 minutes until the beef is well coated and the sauce thickens. Set the beef aside.

Prepare the Sweet Potato Hash:

In the same skillet, add a little more oil if needed, and toss in the sweet potato cubes. Cook, stirring occasionally, for 10–12 minutes until the sweet potatoes are tender and lightly browned.

Add the Veggies:

Add the diced bell pepper, red onion, and mushrooms to the skillet with the sweet potatoes. Cook for another 5–7 minutes, stirring occasionally, until the vegetables are tender.

Add Spinach:

Stir in the chopped spinach and cook for an additional 2–3 minutes, just until the spinach wilts.

Combine the Beef and Veggies:

Add the cooked ground beef back into the skillet and stir everything together. Cook for an additional 2 minutes to combine the flavors.

Serve and Add Toppings:

Serve the hash hot, and garnish with your choice of optional toppings such as cilantro, green onions, avocado, fried egg, guacamole, jalapeños, sour cream, and cheese.
