These buttery, melt-in-your-mouth jam cookies are the perfect treat for any occasion. With a delicate sweetness and a tangy strawberry jam filling, these cookies are simple to make yet incredibly delicious.

- 1 cup unsalted butter, at room temperature
- ¾ cup icing sugar, sifted, plus extra for dusting
- ¼ teaspoon salt
- ½ teaspoon vanilla extract
- 2 cups all-purpose flour, sifted, plus extra for rolling out the dough
- ½ cup strawberry jam
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, beat the softened butter and sifted icing sugar together until light and fluffy.
- Add the salt and vanilla extract, and mix until combined.
- Gradually add the sifted all-purpose flour, mixing until the dough comes together.
- Dust your work surface with flour, and roll out the dough to about ¼ inch thickness.
- Use a round cookie cutter to cut out shapes. For half of the cookies, use a smaller cutter to make a hole in the center to create a window for the jam.
- Place the cookie shapes on the prepared baking sheet.
- Spoon a small amount of strawberry jam into the center of the solid cookies.
- Place the cookies with holes on top of the jam-covered cookies, gently pressing the edges together.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Let the cookies cool completely on a wire rack.
- Once cooled, dust the top with extra sifted icing sugar.
- Serve and enjoy!
Notes
- If you prefer a different jam, raspberry or apricot work well in place of strawberry.
- Be careful not to overfill the jam, as it can leak out while baking.
- These cookies are best enjoyed within a few days of baking.
