- 1 pint vanilla ice cream, softened
- 1 pint strawberry ice cream, softened
- 1 pint mint chocolate chip ice cream, softened
- 1/2 cup rainbow sprinkles
- 1/2 cup unicorn-themed candies or edible glitter
- 1 cup whipped cream
- 1/4 cup purple frosting
- 1/4 cup pink frosting
- 1/4 cup blue frosting
- Optional: Unicorn cake topper
Instructions
- Line an 8-inch round cake pan with parchment paper.
- Spread a layer of softened vanilla ice cream in the bottom of the pan. Smooth out with a spatula and freeze for at least 1 hour.
- Once the vanilla layer is firm, spread a layer of softened strawberry ice cream over it. Smooth and freeze for another 1 hour.
- After the strawberry layer is firm, spread a layer of softened mint chocolate chip ice cream on top. Smooth and freeze for at least 2 hours, or until solid.
- Remove the ice cream cake from the pan and place it on a serving plate.
- Frost the sides and top of the cake with whipped cream.
- Decorate with rainbow sprinkles, unicorn-themed candies, or edible glitter.
- Use the purple, pink, and blue frosting to create a fun and colorful design on top of the cake.
- Optionally, place a unicorn cake topper on the cake.
