Ingredients

  • 1 pint vanilla ice cream, softened
  • 1 pint strawberry ice cream, softened
  • 1 pint mint chocolate chip ice cream, softened
  • 1/2 cup rainbow sprinkles
  • 1/2 cup unicorn-themed candies or edible glitter
  • 1 cup whipped cream
  • 1/4 cup purple frosting
  • 1/4 cup pink frosting
  • 1/4 cup blue frosting
  • Optional: Unicorn cake topper

Instructions

  • Line an 8-inch round cake pan with parchment paper.
  • Spread a layer of softened vanilla ice cream in the bottom of the pan. Smooth out with a spatula and freeze for at least 1 hour.
  • Once the vanilla layer is firm, spread a layer of softened strawberry ice cream over it. Smooth and freeze for another 1 hour.
  • After the strawberry layer is firm, spread a layer of softened mint chocolate chip ice cream on top. Smooth and freeze for at least 2 hours, or until solid.
  • Remove the ice cream cake from the pan and place it on a serving plate.
  • Frost the sides and top of the cake with whipped cream.
  • Decorate with rainbow sprinkles, unicorn-themed candies, or edible glitter.
  • Use the purple, pink, and blue frosting to create a fun and colorful design on top of the cake.
  • Optionally, place a unicorn cake topper on the cake.

Notes

  • Softening Ice Cream: Let the ice cream sit out for about 10 minutes before spreading to make it easier to work with.
  • Firming Layers: Ensure each layer is completely firm before adding the next to avoid mixing of flavors.
