Ingredients

  • Cake Layers:
    • 2 1/2 cups all-purpose flour
    • 2 1/2 teaspoons baking powder
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1 cup unsalted butter, softened
    • 1 3/4 cups granulated sugar
    • 4 large eggs, room temperature
    • 1 tablespoon vanilla extract
    • 1 cup buttermilk
  • Vanilla Buttercream Frosting:
    • 1 1/2 cups unsalted butter, softened
    • 5 cups powdered sugar
    • 1/4 cup heavy cream
    • 2 teaspoons vanilla extract
    • Pinch of salt
  • Decoration (optional):
    • Sprinkles
    • Chocolate shavings
    • Edible glitter

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  • In a large bowl, beat butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in vanilla extract.
  • Gradually add flour mixture to butter mixture alternately with buttermilk, beginning and ending with flour mixture. Beat until just combined.
  • Divide batter evenly among prepared pans. Smooth tops with a spatula.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Cool in pans on wire racks for 10 minutes. Remove from pans, and cool completely on wire racks.
  • For the frosting: In a large bowl, beat softened butter until creamy. Gradually add powdered sugar, beating until combined. Add heavy cream, vanilla extract, and salt, and beat on high speed for 3 minutes until light and fluffy.
  • To assemble: Place one cake layer on a serving plate. Spread a layer of frosting on top. Repeat with the second and third cake layers, stacking them on top of each other. Use remaining frosting to frost the top and sides of the cake.
  • Decorate with sprinkles, chocolate shavings, or edible glitter as desired.
