Description

Celebrate with this rich and festive Three Layers Chocolate M&M Celebration Cake! Moist chocolate cake layers are filled with colorful M&M’s and topped with creamy chocolate frosting, perfect for any special occasion.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1/2 cup boiling water
  • 1 cup M&M’s (for baking)
  • 1 cup chocolate chips (for frosting)

For the Frosting:

  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1/2 cup cocoa powder
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup M&M’s (for decoration)

Instructions

For the Cake:

  1. Preheat the oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cocoa powder.
  3. In a large bowl, beat together granulated sugar, brown sugar, and softened butter until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  5. Gradually add dry ingredients to the butter mixture, alternating with buttermilk. Mix until just combined.
  6. Stir in boiling water until the batter is smooth. Gently fold in M&M’s.
  7. Divide the batter evenly among the prepared cake pans and smooth the tops.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely.

For the Frosting:

  1. Beat softened butter until creamy.
  2. Gradually add powdered sugar and cocoa powder, mixing well.
  3. Add milk and vanilla extract and beat until smooth and fluffy.

Assembling the Cake:

  1. Once cakes are completely cool, spread frosting between layers and over the top and sides of the cake.
  2. Decorate with additional M&M’s on top.

Notes

  • Cooling: Ensure the cakes are completely cooled before frosting to prevent melting.
  • Consistency: If the frosting is too thick, add a little more milk to reach the desired consistency.
  • Decorations: Press M&M’s gently into the frosting to ensure they stay in place.
