Instructions

  2. Whisk the Egg Yolks and Sugar: In a heatproof bowl set over simmering water, whisk the egg yolks and granulated sugar until pale, thick, and creamy. This ensures the sugar dissolves and safely cooks the eggs.
  3. Blend in Mascarpone: Remove the egg yolk mixture from heat and let it cool slightly. Gently fold in the mascarpone cheese until fully combined and smooth, creating a luscious custard base.
  4. Whip the Cream: In a separate bowl, whip the cream to soft peaks. This adds airiness and lightens the mascarpone custard mixture.
  5. Combine and Fold Mixtures: Carefully fold the whipped cream into the mascarpone custard, preserving the fluffy texture while achieving a silky smooth blend.
  6. Assemble the Layers: Quickly dip each ladyfinger into the cooled coffee soak (do not soak too long to avoid sogginess). Arrange a layer of soaked ladyfingers at the bottom of your dish. Spread half of the mascarpone cream mixture over them. Repeat with another layer of dipped ladyfingers and the remaining cream until all ingredients are used.
  7. Chill and Finish: Cover and refrigerate the assembled tiramisu for at least 4 hours or preferably overnight to allow flavors to meld and textures to firm up. Just before serving, dust generously with cocoa powder for the classic finish.
