These Tomato Crostini with Whipped Feta are the perfect appetizer for any occasion. The creamy whipped feta spread, paired with fresh cherry tomatoes and crispy baguette slices, creates a delightful combination of textures and flavors. Ingredients

  • 1 baguette, sliced into 1/2 inch thick rounds
  • 2 tablespoons olive oil
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese
  • 2 tablespoons cream cheese
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  • Preheat oven to 400°F (200°C).
  • Brush the baguette slices with olive oil and place them on a baking sheet. Toast in the oven for 5-7 minutes, until golden brown.
  • In a food processor, combine feta cheese, cream cheese, lemon juice, salt, and pepper. Blend until smooth and creamy.
