- 20 oz cheese tortellini, uncooked (approximately 5 cups uncooked)
- 10 oz cherry tomatoes, halved
- 8 oz mozzarella pearls
- 1 cup chopped spinach
- ¼ cup chopped basil
- ½ cup olive oil
- 2 tablespoons balsamic vinegar
- 3–4 garlic cloves, minced
- ¾ teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon pepper
- Balsamic glaze (optional)
Instructions
- Cook the cheese tortellini according to package instructions. Drain and set aside to cool slightly.
- In a large bowl, combine the cooked tortellini, halved cherry tomatoes, mozzarella pearls, chopped spinach, and basil.
- In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, Italian seasoning, salt, and pepper.
- Pour the dressing over the tortellini mixture and toss gently to combine.
- If desired, drizzle with balsamic glaze before serving for extra flavor.
- Serve chilled or at room temperature.
