Ingredients
For the Meatloaf:

2 pounds ground beef (80/20)

1 pound Italian sausage

1/2 cup Italian breadcrumbs

For the Filling:

12 pepperoni slices

4 slices fresh mozzarella

1 can (28 oz) San Marzano tomatoes, separated

Instructions

Prepare the Meatloaf:

Preheat the Traeger grill to 375°F (190°C).

In a large bowl, combine ground beef, Italian sausage, eggs, breadcrumbs, Italian seasoning, and salt. Mix until fully incorporated.

Divide the meat mixture in half. Shape one half into a loaf on a sheet of wax paper or plastic wrap.

Stuff the Meatloaf:

Place the pepperoni, mozzarella, and basil leaves in the center of the meatloaf.

Carefully fold the second half of the meat mixture over the filling, sealing the edges to fully encase the stuffing.

Smoke the Meatloaf:

Place the stuffed meatloaf on the preheated Traeger grill. Smoke for about 1.5 to 2 hours, or until the internal temperature reaches 160°F (71°C).

While the meatloaf is cooking, heat olive oil in a pan over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

Add the San Marzano tomatoes, salt, oregano, and optional sugar. Simmer for 15-20 minutes, mashing the tomatoes as they cook to form a sauce.
