Description

A deliciously smoky twist on classic meatloaf, stuffed with pepperoni, fresh mozzarella, and basil, and topped with a rich San Marzano tomato sauce. This recipe brings together the best flavors of pizza and meatloaf, perfect for a family dinner or gathering.

For the Meatloaf:

  • 2 pounds ground beef (80/20)

  • 1 pound Italian sausage

  • 2 eggs

  • 1/2 cup Italian breadcrumbs

  • 1 teaspoon Italian seasoning

  • 1 teaspoon salt

For the Filling:

  • 12 pepperoni slices

  • 4 slices fresh mozzarella

  • 1 can (28 oz) San Marzano tomatoes, separated

  • 4 fresh basil leaves

For the Sauce:

  • 1/8 cup olive oil

  • 1 tablespoon fresh garlic, minced

  • 1 can (28 oz) San Marzano tomatoes

  • 1/2 teaspoon salt

  • 1 teaspoon oregano

  • 1/2 teaspoon sugar (optional)


Instructions

  • Prepare the Meatloaf:

    • Preheat the Traeger grill to 375°F (190°C).

    • In a large bowl, combine ground beef, Italian sausage, eggs, breadcrumbs, Italian seasoning, and salt. Mix until fully incorporated.

    • Divide the meat mixture in half. Shape one half into a loaf on a sheet of wax paper or plastic wrap.

  • Stuff the Meatloaf:

    • Place the pepperoni, mozzarella, and basil leaves in the center of the meatloaf.

    • Carefully fold the second half of the meat mixture over the filling, sealing the edges to fully encase the stuffing.

  • Smoke the Meatloaf:

    • Place the stuffed meatloaf on the preheated Traeger grill. Smoke for about 1.5 to 2 hours, or until the internal temperature reaches 160°F (71°C).

  • Make the Sauce:

    • While the meatloaf is cooking, heat olive oil in a pan over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

    • Add the San Marzano tomatoes, salt, oregano, and optional sugar. Simmer for 15-20 minutes, mashing the tomatoes as they cook to form a sauce.

 

  • Serve:

    • Once the meatloaf reaches the desired temperature, remove it from the grill and let it rest for 10 minutes before slicing.

    • Serve the meatloaf slices with the prepared tomato sauce spooned over the top.

Notes

  • For extra flavor, sprinkle some grated Parmesan cheese over the meatloaf before serving.

  • You can also add more basil or substitute the pepperoni with other favorite pizza toppings like mushrooms or olives.
