Description

A simple yet delicious Caribbean dish featuring tender corn boiled in coconut milk, sweetened with brown sugar and seasoned with salt. A perfect side dish that brings a tropical touch to any meal.


Ingredients

  • 4 ears of corn
  • 2 cups of coconut milk
  • 1/4 cup of brown sugar
  • 1 teaspoon of salt

Instructions

  • In a large pot, bring the coconut milk to a simmer.
  • Add the brown sugar and salt to the pot and stir until dissolved.
  • Add the corn to the pot and simmer for 15-20 minutes, or until the corn is tender.
  • Remove the corn from the pot and serve hot.

Notes

  • For extra richness, you can use full-fat coconut milk.
