Description

This easy Turkey Pot Pie Recipe is a hearty, comforting meal perfect for chilly nights, combining tender turkey, mixed vegetables, and a creamy sauce beneath a flaky golden crust. Ideal for using leftover turkey or enjoying a classic homemade dish, it is simple to prepare, customizable, and freezer-friendly.

Ingredients

Scale

Filling

  • 2 tablespoons butter
  • 1 cup chopped onions
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1/4 cup all-purpose flour (or gluten-free flour blend)
  • 2 cups chicken broth (or vegetable broth)
  • 1 cup milk or cream (or dairy-free alternative)
  • 2 to 3 cups cooked turkey, shredded or cubed
  • 1 cup frozen peas
  • Salt and pepper, to taste
  • 2 tablespoons fresh herbs (parsley, thyme, or rosemary), chopped

Crust

  • 1 gluten-free pie crust or puff pastry

Instructions

  1. Prepare the filling: Melt butter over medium heat in a large skillet. Add chopped onions, carrots, and celery and cook until softened. Stir in flour to create a roux, cooking briefly to remove raw taste. Gradually whisk in chicken broth and milk until smooth, then simmer until the sauce thickens into a creamy base.
  2. Combine turkey and vegetables: Add cooked turkey pieces and frozen peas to the thickened sauce. Stir well to coat all ingredients evenly, then season with salt, pepper, and fresh herbs. Remove from heat once everything is heated through and blended nicely.
  3. Assemble the pot pie: Pour the filling into a baking dish. Cover with the pie crust, trimming and crimping the edges to seal. Cut a few small slits on top of the crust to allow steam to escape while baking, preventing sogginess.
  4. Bake to golden perfection: Bake in a preheated oven at 375°F (190°C) for about 30 to 35 minutes. The crust should be beautifully golden and flaky, bubbling slightly around the edges signaling the pie is ready to enjoy.

Notes

  • Let pie crust warm slightly before covering the filling to prevent cracking.
  • Thicken the sauce well with the roux to avoid a watery filling.
  • Add fresh herbs at the end of cooking for bright, fresh flavor.
  • Check that the crust is golden brown and filling is bubbly before removing from oven.
  • Allow the pot pie to cool for 5 minutes before slicing and serving.
