- 1 pound ground beef
- 2 cloves garlic, minced
- 1 small onion, chopped
- 2 large green peppers, chopped
- 14.5 oz can diced tomatoes
- 8 oz can tomato sauce
- ½ cup beef broth
- ½ cup long grain rice, uncooked
- 1 tablespoon Worcestershire sauce
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 cup shredded mozzarella cheese
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat if necessary.
- Add the minced garlic and chopped onion to the skillet, cooking for about 2-3 minutes until softened.
- Add the chopped green peppers, diced tomatoes (with juices), tomato sauce, beef broth, uncooked rice, Worcestershire sauce, salt, and pepper. Stir to combine.
- Bring the mixture to a simmer, cover, and cook for 10-15 minutes, or until the rice is mostly cooked through.
- Transfer the mixture to a greased 9×13 inch baking dish.
- Sprinkle shredded mozzarella cheese evenly over the top of the casserole.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes before serving.
Notes
- You can use other types of cheese like cheddar or a blend of cheeses if preferred.
- If you like a bit of spice, add some crushed red pepper flakes or diced jalapeños to the casserole.
- To make it ahead, assemble the casserole and refrigerate until ready to bake.
