Description

This comforting and easy Unstuffed Bell Pepper Casserole with Ground Beef is a delicious take on the classic stuffed peppers. Ground beef, rice, bell peppers, and a savory tomato sauce blend together for a hearty one-dish meal that’s perfect for family dinners.


Ingredients

  • 1 pound ground beef
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 2 large green peppers, chopped
  • 14.5 oz can diced tomatoes
  • 8 oz can tomato sauce
  • ½ cup beef broth
  • ½ cup long grain rice, uncooked
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 cup shredded mozzarella cheese

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat if necessary.
  • Add the minced garlic and chopped onion to the skillet, cooking for about 2-3 minutes until softened.
  • Add the chopped green peppers, diced tomatoes (with juices), tomato sauce, beef broth, uncooked rice, Worcestershire sauce, salt, and pepper. Stir to combine.
  • Bring the mixture to a simmer, cover, and cook for 10-15 minutes, or until the rice is mostly cooked through.
  • Transfer the mixture to a greased 9×13 inch baking dish.
  • Sprinkle shredded mozzarella cheese evenly over the top of the casserole.
  • Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let cool for a few minutes before serving.

Notes

  • You can use other types of cheese like cheddar or a blend of cheeses if preferred.
  • If you like a bit of spice, add some crushed red pepper flakes or diced jalapeños to the casserole.
  • To make it ahead, assemble the casserole and refrigerate until ready to bake.
