Description

These Vegan Cauliflower Tacos are bursting with flavor and texture. Roasted cauliflower, seasoned with chili powder, cumin, and garlic powder, creates the perfect base for a healthy and satisfying taco.   • 1 head of cauliflower, chopped into florets
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 8 small corn tortillas
  • 1 cup guacamole
  • Fresh cilantro for garnish

Instructions

  • Preheat the oven to 425°F (220°C).
  • Toss the cauliflower florets with olive oil, chili powder, cumin, garlic powder, salt, and pepper, ensuring they are evenly coated.
  • Spread the cauliflower on a baking sheet and roast for 25 minutes, or until crispy and golden brown.
  • While the cauliflower is roasting, warm the corn tortillas in a dry pan or microwave.
  • Once the cauliflower is done, fill each tortilla with roasted cauliflower.
  • Top with a generous scoop of guacamole and garnish with fresh cilantro.
  • Serve immediately and enjoy!
