- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- 8 small corn tortillas
- 1 cup guacamole
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 425°F (220°C).
- Toss the cauliflower florets with olive oil, chili powder, cumin, garlic powder, salt, and pepper, ensuring they are evenly coated.
- Spread the cauliflower on a baking sheet and roast for 25 minutes, or until crispy and golden brown.
- While the cauliflower is roasting, warm the corn tortillas in a dry pan or microwave.
- Once the cauliflower is done, fill each tortilla with roasted cauliflower.
- Top with a generous scoop of guacamole and garnish with fresh cilantro.
