These Vegan Love Letter Pastries are the perfect sweet treat to show someone you care. Made with a buttery, flaky pastry dough and filled with a delicious strawberry jam, they’re a perfect way to indulge in a dairy-free dessert.


Ingredients

  • 240g plain flour
  • 2 tablespoons caster sugar (plus extra for sprinkling)
  • 220g dairy-free block butter (cold and cut into small cubes)
  • Ice water (see method)
  • 1 jar vegan-friendly strawberry jam
  • Dairy-free milk (optional)
  • Icing sugar (for dusting, optional)

Instructions

  • Preheat the oven to 200°C (400°F).
  • In a large bowl, mix the plain flour and caster sugar.
  • Add the cold, cubed dairy-free butter into the flour mixture. Use your fingers or a pastry cutter to rub the butter into the flour until the mixture resembles breadcrumbs.
  • Gradually add ice-cold water, one tablespoon at a time, and mix gently until a dough starts to form. Be careful not to overwork the dough.
  • Turn the dough out onto a lightly floured surface and knead gently until smooth. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  • Once chilled, roll the dough out on a lightly floured surface to about 5mm thick.
  • Cut the dough into squares (roughly 8cm x 8cm).
  • Place a teaspoon of strawberry jam in the center of each square.
  • Fold the corners of each square towards the center, creating a love letter shape. Press the edges to seal the pastry.
  • Place the pastries onto a baking sheet lined with parchment paper. If desired, brush the top with a little dairy-free milk for a golden finish.
  • Bake in the preheated oven for 15-20 minutes, or until the pastries are golden and puffed up.
  • Once baked, remove from the oven and let cool slightly. Dust with icing sugar and sprinkle with caster sugar if desired.
  • Serve warm or at room temperature.

Notes

  • For a different filling, try using raspberry jam or your favorite fruit preserve.
  • You can adjust the sweetness by adding more or less caster sugar.
  • If the dough is too sticky, add a little more flour before rolling out.
