Description

These delicious vegetarian sausage rolls combine the umami of miso paste and mushrooms, wrapped in crispy puff pastry. Perfect for a snack, appetizer, or light meal, these rolls are packed with flavor and easy to make.


Ingredients

  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 200g mushrooms, finely chopped
  • 2 tbsp miso paste
  • 1 tsp soy sauce
  • 1 tsp dried thyme
  • 1/2 cup breadcrumbs
  • 1 pack puff pastry
  • 1 egg, beaten

Instructions

  • Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
  • Heat the olive oil in a pan over medium heat and sauté the onion and garlic until softened.
  • Add the mushrooms and cook until they release their liquid and start to brown.
  • Stir in the miso paste, soy sauce, thyme, and breadcrumbs. Cook for another 2-3 minutes.
  • Roll out the puff pastry and cut into rectangles.
  • Spoon the mushroom mixture onto each rectangle and roll up to enclose the filling.
  • Brush the sausage rolls with beaten egg and place on the prepared baking tray.
  • Bake for 20-25 minutes or until golden brown and crispy.
  • Serve hot and enjoy!

Notes

  • You can make these ahead of time and freeze them before baking. Simply bake from frozen, adding a few extra minutes to the cooking time.
  • Use gluten-free puff pastry if needed for a gluten-free version.
