Description
These delicious vegetarian sausage rolls combine the umami of miso paste and mushrooms, wrapped in crispy puff pastry. Perfect for a snack, appetizer, or light meal, these rolls are packed with flavor and easy to make.

- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 200g mushrooms, finely chopped
- 2 tbsp miso paste
- 1 tsp soy sauce
- 1 tsp dried thyme
- 1/2 cup breadcrumbs
- 1 pack puff pastry
- 1 egg, beaten
Instructions
- Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
- Heat the olive oil in a pan over medium heat and sauté the onion and garlic until softened.
- Add the mushrooms and cook until they release their liquid and start to brown.
- Stir in the miso paste, soy sauce, thyme, and breadcrumbs. Cook for another 2-3 minutes.
- Roll out the puff pastry and cut into rectangles.
- Spoon the mushroom mixture onto each rectangle and roll up to enclose the filling.
- Brush the sausage rolls with beaten egg and place on the prepared baking tray.
- Bake for 20-25 minutes or until golden brown and crispy.
- Serve hot and enjoy!
Notes
- You can make these ahead of time and freeze them before baking. Simply bake from frozen, adding a few extra minutes to the cooking time.
- Use gluten-free puff pastry if needed for a gluten-free version.
