  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1/2 cup beef broth or water
  • 10 oz Velveeta cheese, cubed
  • 1/2 tsp paprika
  • 1/2 tsp chili powder (optional for a little heat)
  • Salt and pepper, to taste
  • 1 tbsp olive oil (optional for sautéing)
  • 1/4 cup chopped parsley (optional for garnish)

Instructions

  • Cook the Pasta:
    • Bring a large pot of salted water to a boil. Add the bowtie pasta and cook according to package instructions until al dente. Drain and set aside.
  • Cook the Ground Beef:
    • While the pasta is cooking, heat olive oil in a large skillet over medium heat, if using. Add the ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if necessary. Add diced onion and minced garlic to the beef and sauté for 2-3 minutes, until the onion becomes translucent.
  • Add Seasonings:
    • Stir in the diced tomatoes with their juices, beef broth, paprika, chili powder (if using), salt, and pepper. Let the mixture simmer for about 5-7 minutes to allow the flavors to meld.
  • Melt the Velveeta:
    • Reduce the heat to low and add the Velveeta cheese cubes to the beef mixture. Stir constantly until the cheese is fully melted and the sauce is creamy.
  • Combine with Pasta:
    • Add the cooked bowtie pasta to the skillet and toss everything together until the pasta is evenly coated with the cheesy beef sauce.
  • Serve:
    • Serve the Velveeta Beef Bowtie Pasta warm, garnished with chopped parsley if desired.
